At present, glyceric acid is mainly obtained through chemical synthesis and microbial methods. Microbial methods can be divided into microbial fermentation and biological transformation. Chemical synthesis produces L- and D-type glyceric acid and their racemic mixtures, while microbial methods mainly use some bacterial strains and their own enzymes to oxidize glycerol to obtain D-type glyceric acid. The production of glyceric acid by microbial methods uses strains with alcohol dehydrogenase system and aldehyde dehydrogenase system in the body, using glycerol as a carbon source and using its own enzyme system to oxidize glycerol to generate glyceric acid. The microbial method is a synthesis method with high stereoselectivity. The reaction conditions of the microbial method are mild, the raw material utilization rate is high, the process is simple and easy to control, the product obtained has high purity, which is convenient for subsequent separation and extraction, and the biological transformation process does not require too much time. Multiple chemical reagents, green and environmentally friendly, in line with the concept of environmental protection, and more viable than chemical synthesis methods.

(2) Product prices are too high, which affects the development of the industry. (3) The lack of corresponding evaluation standards cannot form a good regulatory role for the production of existing products and the research and development of new products. It is urgent to formulate strict and standardized production standards and testing standards that are in line with international advanced levels.
